Apple Strudel Biscotti

12 weeks of Christmas cookies - week 10, or Apple Love Story- Act Two.
And this was a double love story, trust me.
My first time ever making biscotti, and it was love at first bite.
I wanted to make biscotti, for a long time, but almost all recipes are made with whole nuts of every kind, and that is not exactly what I wanted. I wanted something different.
On the other hand the idea of apple strudel flavored biscotti was there for a long time, too, but couldn't find a recipe anywhere on internet, and had to set out on this adventure on my own. No, not exactly on my own, I had a look on a couple biscotti recipes, all very different, but had to try and invent most of the recipe.
They may not look as the most perfect biscotti you've ever seen, but they taste heavenly ^__^

Apple Strudel Biscotti

I made these biscotti last week, and they were gone within 2 days, which is not so common at my home (the recipe makes about 30 biscotti, and consider the fact my kids don't like this kind of cookies, too hard for them). I guess my husband had a few pieces, but I'm sure I ate about 90% on my own. And, do you want to know the best part of the story? I made them again this week. Just to make sure I got all the ingredients, the procedure and the cooking time right °__° and of course to fill my cookie box again.
And if I weren't dead tired right now, I'd probably find right words to describe them, but I can't wait to get my feet up on my bed and float peacefully into the land of dreams - surviving the Ikea trip and a kid's birthday party in one day is way too much.
But before I drop from my chair, I just wanted to tell you: if you like biscotti, if you like that rustic, crunchy quality in a cookie, and above all, if you love cinnamon and apples as much as I do, then you must try these, don't make me twist your arm.

Apple Strudel Biscotti

Apple Strudel Biscotti


1 apple
15 g butter
25 g brown sugar
1/2 teaspoon cinnamon
30 g dried cranberries (or raisins)
about 3 TBspoons of liqueur (e.g. Calvados or rum) or orange juice, slightly warmed up

250 g flour
50 g almond meal
50 g butter
125 g sugar
25 g acacia honey
1 egg
1 egg yolk
1 teaspoon pure vanilla extract
1/2 - 1 teaspoon cinnamon
1 teaspoon baking powder
A pinch of salt
*for brushing:
1 egg white
2 TBspoons sugar
1 teaspoon cinnamon

Peel and core the apple, cut it into small pieces.
Put the chopped apple and 15 g butter into a skillet and start heating, stirring for a couple minutes. Cover and cook for about 5 minutes on medium low heat until apples are slightly soft (depends also on type of apple you’re using, mine were Pink Lady, very crisp and juicy apples, not too sweet) .
Remove the lid, add the brown sugar (I used muscovado) and let the sugar melt and caramelize on high heat, stirring continuously.
Turn the heat off and add ½ teaspoon cinnamon. Spread the apples on a baking sheet covered with a piece of parchment paper. Bake them in an oven preheated to 150°C for 20 minutes and then let them cool.
Soak the cranberries (or raisins) in warm liqueur or orange juice (I used the apple liqueur), while you’re preparing the dough.



Put the butter (50 g), 25 g sugar and the honey into a small mixing bowl and cream everything together using a wooden spoon. When smooth and creamy, add the almond meal and mix well. Set aside.
In a another, bigger mixing bowl, put the sifted flour, the remaining 100 g of sugar, baking powder, a pinch of salt and the cinnamon (depending on how much you like cinnamon flavor, add ½ to 1 teaspoon) and whisk everything together.
Add the egg and the egg yolk lightly beaten with the vanilla extract, and mix with a fork to get sort of rough crumbs.
Stir in the apples and the cranberries (drained from the liquid they were soaking in).
Now add the previously prepared butter and almond mixture and mix well with your hands until firm, compact dough’s formed.



Divide the dough in two pieces and shape each into a log (about 3-4 cm in diameter). Put the logs on a baking sheet lined with parchment paper and flatten just slightly with your hands.
Whisk the egg white just slightly with a fork and brush the dough logs. Sprinkle with the cinnamon sugar and bake in an oven preheated to 180°C for 20-25 minutes, or until golden.



Take the baking sheet out, and lower the heat to 160°C.
Wait for about 10 minutes until the dough is cool enough to handle and slice the logs diagonally into 1 cm large slices using a serrated knife.
Place them on the baking sheet again with the cut side down.



Bake them again for about 20 minutes, flipping the biscotti half way through so they bake evenly on both sides.
Let them cool completely on the baking sheet and then store in an airtight container.
Enjoy with a cup of warm tea.



Apple Strudel Biscotti

Qualche tempo fa, su un forum americano ho sentito parlare dei biscotti allo strudel di mele, ma siccome questa ragazza li vende on line, la ricetta era ed è rimasta segreta, naturalmente. Però, l’idea di provare a inventarmeli da sola finalmente mi ha spinto e penso di essere riuscita a creare qualcosa di molto soddisfacente. Anzi, io mi sono innamorata, li ho fatti due volte in giro di 3 giorni, perché sono letteralmente spariti (il colpevole, cioè io, ha fatto fuori circa 90% da solo ^__^
Il profumo della cannella che usciva dalla mia scatola di latta ogni volta che la aprivo, era davvero spettacolare. Quindi, come potevo resistere? Io che vado matta per le mele e cannella.

Biscotti allo strudel di mele


1 mela
15 g burro
25 g zucchero di canna
1/2 cucchiaino di cannella
30 g mirtilli rossi secchi (o uvetta)
circa 3 cucchiai di liquore (per esempio Calvados or rum) o succo d’arancia (io ho usato il liquore alla mela anurca)

250 g di farina
50 g di farina di mandorle
50 g di burro
125 g di zucchero
25 g di miele d’acacia
1 uovo intero
1 tuorlo
1 cucchiaino di estratto puro di vaniglia
1/2 - 1 cucchiaino di cannella
1 cucchiaino di lievito per dolci
un pizzico di sale


1 albume
2 cucchiai di zucchero
1 cucchiaino di cannella


Sbucciate la mela, tagliatela a metà, tagliate via il torsolo e poi tagliatela a pezzettini piccoli.
Mettete i pezzettini di mela in una padella con 15 g di burro e scaldate per qualche minuto mescolando. Coprite la padella e lasciate ammorbidire le mele per circa 5 minuti, a fuoco medio-basso.
Togliete il coperchio e aggiungete lo zucchero di canna (ho usato il muscovado), alzate la fiamma e lasciate caramellare mescolando in continuazione.
Spegnete la fiamma e aggiungete ½ cucchiaino di cannella. Versate le mele su una teglia ricoperta con la carta da forno e asciugatele leggermente nel forno riscaldato a 150°C per circa 20 minuti. Lasciatele raffreddare.
Mettete i mirtilli rossi (o uvetta) in ammollo nel liquore o succo leggermente riscaldato mentre preparate la pasta per i biscotti.
Mescolate in una ciotola 50 g di burro con 25 g di zucchero e il miele per renderlo cremoso, senza montare. Unite la farina di mandorle e mescolate bene.
In un altro contenitore mescolate la farina, il resto dello zucchero (100 g), lievito, sale e la cannella.
Unite l’uovo e il tuorlo leggermente sbattuti con una forchetta e mescolate con una forchetta fino a ottenere delle briciole piuttosto grosse. Aggiungete a questo impasto le mele e i mirtilli rossi sgocciolati.
Unite adesso i due composti e impastate con le mani fino a ottenere la pasta compatta.
Dividete la pasta in due e formate due cilindri di diametro 3-4 cm.
Posizionateli su una teglia da forno e appiattiteli leggermente con le mani.
Sbattete leggermente l’albume con una forchetta e spennellate i cilindri di pasta. Cospargeteli con lo zucchero aromatizzato con la cannella e infornate a 180°C per circa 20-25 minute, o finché dorati.
Toglieteli dal forno e lasciate raffreddare per circa 10 minuti.
Abbassate la temperatura del forno a 160°C.
Con un coltello a lama seghettata, tagliate le fettine diagonali larghe 1 cm e posizionatele sulla teglia con la parte tagliata verso il basso.
Metteteli di nuovo nel forno e cuocete di nuovo per 20 minuti, girando i biscotti a metà cottura per avere la doratura uniforme.
Lasciateli raffreddare completamente sulla teglia.
Conservateli in un contenitore di latta e godeteveli con una tazza di tè caldo.

Biscotti s okusom štrudle od jabuka


1 jabuka
15 g maslaca
25 g smeđeg šećera
1/2 žličice cimeta
30 g suhih brusnica
oko 3 žlice nekog likera (od jabuka ili ruma) ili soka naranče
______________________________
250 g brašna
50 g mljevenih badema
50 g maslaca
125 g šećera
25 g meda
1 jaje
1 žumanjak
1 žličica čistog ekstrakta vanilije
1/2 - 1 žličica cimeta
1 žličica praška za pecivo
prstohvat soli


Jabuku ogulite i narežite na sitne komadiće.
Stavite jabuku i 15 g maslaca u tavu i polako zagrijavajte miješajući par minuta. Poklopite, smanjite temperaturu i kuhajte oko 5 minuta da komadići jabuke malo omekšaju.
Maknite poklopac, dodajte 25 smeđeg šećera (ja sam stavila muscovado), pojačajte vatru i kuhajte miješajući dok se šećer ne karamelizira. Dodaje cimet i dobro promiješajte, pa istresite jabuke na pleh obložen papirom za pečenje i prosušite ih u pećnici zagrijanoj na 150°C oko 20 minuta. Izvadite i ostavite da se prohlade.
Brusnice namočite u zagrijanom likeru/rumu/soku da odmeknu.
Pomiješajte u zdjeli drvenom žlicom omekšali maslac, 25 g šećera i med da postane kremasto, a onda dodajte i mljevene bademe.
U drugoj zdjeli pomiješajte prosijano brašno, preostalih 100 g šećera, prašak za pecivo, malo soli i cimet (ja sve izmiješam pjenjačom).
Pomiješajte cijelo jaje i žumanjak (ostavite bjeljanjak za kasnije), malo ih razmutite vilicom, pa dodajte u smjesu od brašna, zajedno s ekstraktom vanilije. Miješajte vilicom - dobit ćete krupnije mrvice.
Dodajte ovoj smjesi jabuke i brusnice i opet izmiješajte vilicom.
Pomiješajte dvije smjese, brašno + jaja i bademi + maslac, izmiješajte dobro rukama da dobijete kompaktno tijesto.
Podijelite tijesto na dva jednaka dijela i od svakog oblikujte rolnicu promjera 3-4 cm. Položite ih na dugi pleh obložen papirom za pečenje, malo ih spljoštite rukom.
Razmutite malo bjeljanjak pa kistom nanesite na rolnice od tijesta. Pomiješajte 1 žlicu šećera i 1 žličicu cimeta (nisu u sastojcima) i pospite po rolnicama.
Stavite ih peći u pećnicu zagrijanu na 180°C, 20-25 minuta (ovisno o pećnici), trebaju dobiti lijepu zlatnu boju.
Izavadite iz pećnice (smanjite temperaturu na 160°C) i ostavite 10-ak minuta na plehu, a onda ih izrežite nazubljenim nožem malo dijagonalno na kriške debljine 1 cm.
Izrezane kriške stavite opet na pleh tako da je prerezana strana dolje (odnosno gore) i stavite opet peći - ukupno 20 minuta, nakon 10 minuta preokrenite kekse tako da je donja strana gore i obrnuto.
Ostavite ih da se ohlade na plehu, a onda spremite u metalnu kutiju.

Don't sell yourself short, they came out beautiful, like all of your recipes. I don't know how you make everything look so good! I'll definitely have to try these. :)

  2. Bas sam u fazi biscotta, nedavno sam pravila jedne marokanske, a spremam se jos jedne s bademima i limunom. Ove tvoje mi se bas dopadaju, a mislim da bi bile ukusne i s integralnim brasnom. Probat cu!

  12. Ovaj recept sam čekala. Obožavam biscotte u svakom izdanju, a posebno one klasične samo s bademima. U glavi već neko vrijeme smišljam jednu božićnu kombinaciju ali ova tvoja ideja me baš oduševila i moram ih isprobati. Prekrasno izgledaju, a ne sumnjam ni u okus. :)
